A fun, simple recipe for you to follow to make your own colourful, Inside Out cupcakes!
100g (4oz) butter, softened
100g (4oz) caster sugar
2 large eggs
100g (4oz) self-raising flour
1 level tsp baking powder
4 packs of Smarties
For the decoration:
50g (2oz) butter
100g (4oz) icing sugar, sieved
2 tsp hot water
Left over Smarties
Step 1: Preheat the oven to 200 Fan/ Gas mark 6.
Step 2: Place your fairy cupcakes into a cupcake baking tray.
Step 3: Measure out the cake ingredients and add them all to a bowl. Add the smarties of the Inside Out characters colours (red, blue, yellow, green and purple). Keep some smarties for the decoration. Beat well for 2-3 minutes.
Step 4: Bake for 15-20 minutes, or until golden brown on top.
Step 5: Once baked, take the cupcakes out of the tray to cool.
Step 6: Let the cake cool and begin making the buttercream icing by adding all the measured ingredients into one bowl – watch out for the icing sugar going everywhere!!
Step 7: Pipe the buttercream icing on top of the cupcake.
Step 8: With the left over smarties, crush them into smaller pieces to sprinkle on top of the icing.
