I am not a professional baker nor am I incredible at decorating but here is a simple recipe for you to follow to make some Minnie Mouse themed cupcakes!
Ingredients: Makes 24
100g (4oz) butter, softened
100g (4oz) caster sugar
2 large eggs
100g (4oz) self-raising flour
1 level tsp baking powder
50g white chocolate drops
For the decoration:
50g (2oz) butter
100g (4oz) icing sugar, sieved
2 tsp hot water
Red/Pink food colouring
White sugar balls
Small chocolate buttons
Step 1: Preheat the oven to 200 Fan/ Gas mark 6.
Step 2: Place your mini fairy cupcakes into a cupcake baking tray.
Step 3: Measure out the cake ingredients and add them all to a bowl. Beat well for 2-3 minutes.
Step 4: Bake for 15-20 minutes, or until golden brown on top.
Step 5: Once baked, take the cupcakes out of the tray to cool.
Step 6: Let the cake cool and begin making the buttercream icing by adding all the measured ingredients into one bowl – watch out for the icing sugar going everywhere!!
Step 7: Add in your food colouring and mix well.
Step 8: Pipe the icing on top of the cupcakes. Add the white sugar balls on top and place the chocolate buttons as the ears.
